Today, I’m excited to share a unique and flavorful dish that combines the earthy sweetness of sweet potatoes with the tartness of fresh blueberries. This dish is perfect for when you’re craving something outside the ordinary and want to savor a burst of colors and flavors on your plate.

Ingredients:

  • 2 medium sweet potatoes, cubed
  • 1 cup fresh blueberries
  • 1/2 cup cashews, toasted
  • 2 cups fresh spinach
  • 2 tbsp coconut oil
  • 1 tsp curry powder
  • 1 lime, juiced
  • Salt and pepper to taste

Kitchen Tools:

To start, heat the coconut oil in a skillet over medium heat. Add the cubed sweet potatoes and cook until they are slightly browned and tender, about 10-12 minutes. Season with curry powder, salt, and pepper.

Next, add the fresh blueberries to the skillet and gently stir to combine with the sweet potatoes. Let the mixture cook for another 2-3 minutes to allow the blueberries to release their juices and create a vibrant sauce.

Once the blueberries have softened, add the fresh spinach to the skillet and continue to cook until wilted. Squeeze the lime juice over the stir-fry and toss in the toasted cashews for a delightful crunch.

Serve the sweet potato and blueberry stir-fry hot, garnished with additional lime wedges for a burst of citrus flavor.
