Greetings food lovers! Today, I’m excited to share a recipe that combines the buttery richness of pistachios with the delicate flavor of mahi mahi, topped off with a refreshing pineapple salsa. This dish is perfect for a tropical-inspired dinner on a warm summer evening.

For this recipe, you will need the following ingredients:

  • mahi mahi fillets (4 fillets, about 150g each)
  • pistachios (1 cup, crushed)
  • pineapple (1 cup, diced)
  • red onion (1/4 cup, finely chopped)
  • cilantro (2 tbsp, chopped)
  • lime juice (2 tbsp)
  • salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • food processor
  • baking sheet
  • skillet
  • mixing bowl

Start by preheating your oven to 375°F (190°C). In a food processor, pulse the pistachios until coarsely ground. Season the mahi mahi fillets with salt and pepper, then press the crushed pistachios onto the top of each fillet. Place the fillets on a baking sheet and bake for 15-20 minutes, or until the pistachio crust is golden brown and the fish is cooked through.

While the mahi mahi is baking, prepare the pineapple salsa. In a mixing bowl, combine the diced pineapple, chopped red onion, cilantro, lime juice, salt, and pepper. Mix well and set aside to let the flavors meld together.

Once the mahi mahi is done, remove it from the oven and let it rest for a few minutes. Serve each fillet with a generous scoop of pineapple salsa on top. The combination of the crunchy pistachio crust and the sweet-tangy salsa is a true flavor explosion.
