Today, I am excited to share a unique and flavorful dish that is perfect for a cozy evening at home – Basil Pesto Stuffed Pork Tenderloin. This dish combines the fresh taste of basil pesto with the juicy tenderness of pork tenderloin, creating a mouthwatering and satisfying meal.

For this recipe, you will need the following ingredients:
– Pork tenderloin (approximately 500g)
– Basil pesto (homemade or store-bought)
– Sun-dried tomatoes (50g)
– Goat cheese (50g)
– Salt and pepper to taste
– Olive oil for cooking

To prepare this dish, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • meat mallet
  • kitchen twine
  • oven-safe skillet

Begin by preheating your oven to 375°F (190°C). Place the pork tenderloin on a cutting board and using a sharp chef’s knife, butterfly the pork by cutting it horizontally and opening it up like a book. Use a meat mallet to flatten the pork gently to an even thickness.

Next, season the inside of the pork with salt and pepper. Spread a generous amount of basil pesto over the inside of the pork, then sprinkle sun-dried tomatoes and crumbled goat cheese on top. Carefully roll up the pork, tucking in the filling as you go. Secure the pork with kitchen twine at 1-inch intervals.

Heat some olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed pork tenderloin on all sides until golden brown, about 2-3 minutes per side. Transfer the skillet to the preheated oven and roast the pork for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

Once the pork is cooked through, remove it from the oven and let it rest for 5 minutes before slicing. Serve the basil pesto stuffed pork tenderloin with your favorite side dishes and enjoy the burst of flavors in every bite.

The total weight of the cooked dish is approximately 800g, with 4 servings at around 200g per serving. Each serving is estimated to be around 350 calories.

A clever tip for this recipe is to make extra basil pesto to serve on the side for an added burst of freshness and flavor.

I hope you give this Basil Pesto Stuffed Pork Tenderloin a try and enjoy the delicious combination of flavors. Feel free to get creative with the filling ingredients and make this dish your own. Happy cooking!
