  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Before you begin, make sure you have the following kitchen tools ready:

  • baking sheet
  • mixing bowl

Start by preheating your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds. Place the squash halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 40-45 minutes, or until the flesh is tender.

While the squash is roasting, cook the quinoa according to the package instructions.
