Today, I decided to share a unique dessert recipe that combines the earthy flavors of taro with the sweetness of carrots, topped with a vibrant matcha frosting. This exotic dessert is perfect for those looking for a twist on a classic carrot cake and want to surprise their taste buds with something new.

Ingredients:

  • 200g taro root, peeled and grated
  • 150g carrots, peeled and grated
  • 150g all-purpose flour
  • 150g brown sugar
  • 3 eggs
  • 120ml vegetable oil
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 15g matcha powder
  • 150g powdered sugar
  • 150g cream cheese
  • 50g butter, softened

  • round cake pan
  • electric mixer

To start, preheat the oven to 350°F (180°C) and grease a round cake pan. In a mixing bowl, combine the grated taro root, grated carrots, brown sugar, eggs, and vegetable oil. Mix until well combined. In a separate bowl, sift together the flour, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cake cool completely before frosting.

For the matcha frosting, beat the softened butter and cream cheese together until smooth. Gradually add the powdered sugar and matcha powder, mixing until well combined and smooth. Spread the frosting over the cooled cake and refrigerate for at least 1 hour before serving.

This Taro Carrot Cake with Matcha Frosting weighs approximately 1200g and serves 8. Each serving is about 150g and contains an estimated 350 calories.
