Today, I’m excited to share a recipe that brings together the flavors of the sea with a touch of exotic spices. This dish is perfect for a busy weeknight when you want something quick, flavorful, and unexpected. The combination of seafood with unique ingredients will surely impress your taste buds and leave you craving more.

Ingredients:

  • shrimp (150g)
  • scallops (100g)
  • squid rings (100g)
  • coconut milk (200ml)
  • lemongrass (2 stalks, chopped)
  • galangal (50g, sliced)
  • bird’s eye chili (2, chopped)
  • kaffir lime leaves (4 leaves)
  • fish sauce (30ml)
  • brown sugar (15g)
  • vegetable oil
  • salt

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • wooden spoon

To start, heat some vegetable oil in a wok over medium heat. Add the chopped lemongrass, sliced galangal, bird’s eye chili, and kaffir lime leaves. Stir fry for a minute until fragrant.

Next, add in the shrimp, scallops, and squid rings. Cook for about 2-3 minutes until the seafood is almost cooked through. Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine and let it simmer for another 2-3 minutes.

Season with salt to taste and give it a final stir. The seafood should be cooked perfectly and infused with the fragrant flavors of the lemongrass, galangal, and kaffir lime leaves.

Extra Tip:

For an extra burst of flavor, try adding a splash of lime juice right before serving. It will brighten up the dish and add a refreshing zing to each bite.
