Today, I’m excited to share a unique recipe that combines flavors from two different cuisines to create a truly special dish. The inspiration for this recipe came from a recent trip I took to Thailand, where I discovered the incredible flavors of both spicy Thai curry and comforting Italian pasta dishes. I wanted to bring these two culinary worlds together in a way that would surprise and delight my taste buds.

Ingredients:

  • spaghetti (250g)
  • coconut milk (1 can)
  • shrimp (200g)
  • red bell pepper (1)
  • onion (1)
  • garlic (2 cloves)
  • red curry paste (1 tbsp)
  • olive oil (1 tbsp)
  • salt and pepper

Kitchen Tools:

  • saucepan
  • skillet
  • wooden spoon
  • knife

To start, boil the spaghetti according to the package instructions until al dente. In a skillet, heat olive oil over medium heat and sauté the sliced onion, minced garlic, and diced bell pepper until softened. Add the shrimp and cook until pink and opaque.

Next, add the red curry paste to the skillet and stir to combine with the vegetables and shrimp. Pour in the coconut milk and let the mixture simmer for a few minutes until it thickens slightly. Season with salt and pepper to taste.

Once the spaghetti is cooked, drain it and add it to the skillet with the curry sauce. Toss everything together until the pasta is fully coated in the creamy, spicy sauce. Serve hot and garnish with fresh herbs or a squeeze of lime for an extra burst of flavor.

The total weight of the cooked dish is approximately 1200g, with 4 servings at around 300g each. One serving is estimated to be around 450 calories.

One unique tip for this dish is to add a splash of fish sauce to the curry sauce for an extra umami kick that really enhances the flavors of the dish.
