Roasted Beet and Goat Cheese Salad

Today, I’m excited to share a unique and flavorful recipe for Roasted Beet and Goat Cheese Salad. This dish is perfect for a light lunch or dinner and combines the earthiness of beets with the creaminess of goat cheese for a truly delightful combination.

Ingredients:

  • 3 medium beets, peeled and diced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 100g crumbled goat cheese
  • 150g mixed greens
  • 2 tbsp balsamic vinegar

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • whisk
  • salad tongs

To start, preheat your oven to 400°F (200°C). In a mixing bowl, toss the diced beets with olive oil, salt, and pepper until evenly coated. Spread the seasoned beets out on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until the beets are tender and slightly caramelized.

Once the beets are roasted, let them cool slightly. In a large salad bowl, combine the roasted beets with the mixed greens. Crumble the goat cheese over the top of the salad. In a small bowl, whisk together the balsamic vinegar and a tablespoon of olive oil. Drizzle the dressing over the salad and toss gently to combine.

The unique twist in this recipe is to sprinkle some chopped pistachios over the salad for an added crunch and nutty flavor. It adds a nice contrast to the soft beets and creamy goat cheese.
