Ingredients:

  • 4 medium red bell peppers (600g)
  • 1 cup cooked quinoa (200g)
  • 2 cups fresh spinach, chopped (100g)
  • 1/2 cup crumbled feta cheese (50g)
  • 1/4 cup chopped sun-dried tomatoes (30g)
  • 1/2 small onion, diced (50g)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

To start, preheat your oven to 375°F (190°C). Cut the tops off the red bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set them aside.

In a medium skillet over medium heat, warm the olive oil. Add the diced onion and minced garlic, cooking until softened and fragrant. Then, add the chopped spinach and cook until wilted. Remove the skillet from heat and stir in the cooked quinoa, crumbled feta cheese, chopped sun-dried tomatoes, salt, and pepper.

Spoon the quinoa mixture into each hollowed-out red bell pepper, filling them to the top. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
