Greetings, fellow dessert lovers! Today, I am excited to share with you my latest creation: Exotic Pistachio Coconut Bars. These delectable bars are a delightful combination of nutty pistachios, tropical coconut, and a hint of aromatic spices. Perfect for an afternoon treat or a sweet ending to any meal, these bars are sure to impress your taste buds.

Ingredients:

  • 200g shelled pistachios
  • 150g unsweetened coconut flakes
  • 100g unsalted butter
  • 100ml honey
  • 1 tsp ground cardamom
  • 1 tsp vanilla extract
  • Pinch of salt

  • 8×8 inch baking pan
  • saucepan
  • mixing bowl

To start, preheat your oven to 180°C (350°F) and line the baking pan with parchment paper. In a food processor, pulse the pistachios until finely chopped. In a saucepan over low heat, melt the butter with honey, cardamom, vanilla, and salt, stirring until smooth. Remove from heat and mix in the chopped pistachios and coconut flakes until well combined.

Transfer the mixture to the prepared baking pan, pressing it down evenly. Bake for 20-25 minutes, or until the edges are golden brown. Allow the bars to cool completely in the pan before cutting into squares or bars.

These Exotic Pistachio Coconut Bars weigh approximately 600g when cooked, yielding 12 bars with an average weight of 50g each. Each serving is estimated to be around 200 calories.
