As the summer heat peaks, I crave the tropical sweetness of mango and the creamy richness of coconut milk. This Spicy Mango Coconut Curry is a perfect balance of sweet, savory, and spicy flavors that will make your taste buds dance.

For this recipe, you will need the following ingredients:

  • 1 ripe mango (approx. 300g)
  • 1 can of coconut milk (400ml)
  • 2 chicken breasts, diced (approx. 400g)
  • 2 tbsp of red curry paste
  • 1 tbsp of fish sauce
  • 1 tbsp of brown sugar
  • 4 kaffir lime leaves
  • 1 stalk of lemongrass, bruised
  • Handful of Thai basil leaves
  • 1 red chili, sliced
  • 2 tbsp of vegetable oil

To bring this dish to life, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • grater

Start by peeling and dicing the ripe mango into chunks. In a large skillet, heat the vegetable oil over medium heat. Add the red curry paste and cook for a minute until fragrant. Toss in the diced chicken breasts and cook until they are golden brown.

Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine. Add the kaffir lime leaves, bruised lemongrass, sliced red chili, and diced mango. Let the curry simmer for 15-20 minutes until the chicken is cooked through and the mango is soft.

Before serving, remove the lemongrass and kaffir lime leaves. Garnish the curry with fresh Thai basil leaves. Serve hot over steamed jasmine rice or with crispy roti for dipping.
