Ingredients:

  • Arborio rice (300g)
  • Fresh mango, diced (1 large mango)
  • Coconut milk (400ml)
  • Vegetable broth (1 liter)
  • Onion, finely chopped (1 medium)
  • Garlic, minced (3 cloves)
  • Lime, zest and juice (1 lime)
  • Fresh cilantro, chopped (a handful)
  • Salt and pepper to taste

Gradually ladle in the simmering vegetable broth, stirring constantly until the rice absorbs the liquid. Continue this process until the rice is al dente, which should take about 18-20 minutes.

Once the risotto reaches the desired consistency, stir in the coconut milk, diced mango, lime zest, and lime juice. Season with salt and pepper to taste. Cook for an additional 2-3 minutes to allow the flavors to meld together.

Remove the risotto from the heat and stir in the chopped cilantro. Let it rest for a few minutes before serving to allow the flavors to fully develop.
