This dish combines the sweetness of pineapple, the umami of teriyaki sauce, and the heartiness of meatballs, all wrapped up in a warm tortilla. It’s a fun and unexpected twist on classic tacos that will surely impress your family and friends.

Ingredients:

  • ground pork (400g)
  • pineapple chunks (200g)
  • teriyaki sauce (100ml)
  • flour tortillas
  • red onion, diced (50g)
  • cilantro, chopped (30g)
  • lime wedges
  • salt and pepper

To start, preheat your oven to 375°F (190°C). In a mixing bowl, combine the ground pork, diced red onion, chopped cilantro, salt, and pepper. Mix everything together until well combined, then shape the mixture into small meatballs. Place the meatballs on a baking sheet and bake in the oven for 15-20 minutes, or until cooked through.

While the meatballs are baking, heat a skillet over medium heat. Add the pineapple chunks to the skillet and cook until they start to caramelize, about 5 minutes. Pour in the teriyaki sauce and let it simmer with the pineapple for another 2-3 minutes, until the sauce thickens slightly.

Once the meatballs are done baking, add them to the skillet with the pineapple and teriyaki sauce. Gently toss everything together until the meatballs are coated in the sauce.

To assemble the tacos, warm up the flour tortillas in a dry skillet. Fill each tortilla with a few meatballs and pineapple chunks, then top with extra teriyaki sauce, diced red onion, and chopped cilantro. Serve the tacos with lime wedges on the side for a burst of citrus freshness.
