– 300g boneless duck meat
– 1 small pumpkin
– 100g dried cranberries
– 50g blue cheese
– 50g pine nuts
– 1 fresh rosemary sprig
– 200ml red wine
– Salt and pepper to taste

Preparation

To start, preheat your oven to 375°F (190°C). Cut the pumpkin in half and scoop out the seeds. Place the pumpkin halves on a baking tray, cut-side up, and roast in the oven for about 30 minutes or until tender.

While the pumpkin is roasting, heat a sauté pan over medium heat. Season the duck meat with salt and pepper, then sear it in the pan until browned on all sides. Remove the duck from the pan and set aside. In the same pan, deglaze with red wine, then add the dried cranberries and let them simmer until plump.

Once the pumpkin is cooked, scoop out the flesh and mix it with the blue cheese and pine nuts in a bowl. Add the duck meat (shredded), cranberries, and red wine sauce. Stir everything together gently, being careful not to break up the pumpkin too much.

Serving

Spoon the pumpkin mixture back into the pumpkin halves and return them to the oven for an additional 10 minutes to heat through. Garnish with fresh rosemary before serving. This dish is best enjoyed hot, with a glass of your favorite red wine.

For an extra layer of flavor, try sprinkling a little extra blue cheese on top of each pumpkin half before reheating in the oven. The melted cheese adds a rich and tangy kick that takes this dish to the next level.
