Ingredients:

  • 2 duck breasts (300g each)
  • 1 cup quinoa (200g)
  • 1 cup fresh blackberries (150g)
  • 1 tablespoon dried lavender flowers
  • 1/4 cup honey (60ml)
  • 2 tablespoons balsamic vinegar (30ml)
  • 2 tablespoons olive oil (30ml)
  • Salt and pepper to taste

In a small saucepan, combine the honey, balsamic vinegar, and a splash of water. Simmer until slightly thickened to create the glaze. Brush the duck breasts with the glaze and finish cooking in a preheated grill pan until done to your liking.

Serve the lavender-honey glazed duck breast on a bed of blackberry-infused quinoa, drizzle with any remaining glaze, and enjoy the perfect balance of flavors.
