Today, I’m excited to share a recipe that pushes the boundaries of flavor combinations and textures. This dish was inspired by a recent trip to a spice market where I was blown away by the vibrant colors and intoxicating scents. I wanted to recreate that sensory experience in my own kitchen, and the result is a dish that will take your taste buds on an unforgettable journey.

Ingredients:

  • purple sweet potato (300g)
  • dragon fruit (100g)
  • star anise (2 pieces)
  • lemongrass (2 stalks)
  • coconut milk (200ml)
  • lime (1)
  • coriander (handful)
  • tamarind paste (30g)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • vegetable peeler
  • saucepan
  • blender

To begin, peel and dice the purple sweet potato and dragon fruit into small chunks. In a saucepan, combine the diced sweet potato, dragon fruit, star anise, lemongrass, and coconut milk. Bring the mixture to a simmer over medium heat and let it cook until the sweet potato is tender.

Meanwhile, zest and juice the lime, and chop the coriander. Once the sweet potato is cooked, remove the star anise and lemongrass from the saucepan. Add the lime zest, lime juice, coriander, and tamarind paste to the saucepan. Use a blender to blend the mixture until smooth.

Pour the soup into bowls and garnish with extra coriander and a squeeze of lime juice. The vibrant purple color of the sweet potato combined with the exotic flavors of dragon fruit and tamarind will leave you craving more.

The total weight of the cooked dish is approximately 800g, with 4 servings. Each serving is around 200g, and I estimate each serving to be around 250 calories.

One unique tip for this dish is to let it sit in the refrigerator overnight before serving. This will allow the flavors to meld together and intensify, creating an even more flavorful experience.

I encourage you to get creative with this recipe and make it your own. Add different spices or herbs, or even try using a different type of fruit. The possibilities are endless, so have fun experimenting in the kitchen!
