Ingredients:

  • 300g pumpkin, diced
  • 1 shallot, finely chopped
  • 10 fresh sage leaves
  • 1 liter vegetable broth
  • 150ml white wine
  • 50g butter
  • 50g parmesan cheese, grated

Begin ladling the warm vegetable broth into the rice, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. This process should take about 20-25 minutes, and the rice should be cooked but still slightly firm to the bite.

While the risotto is cooking, roast the diced pumpkin in the oven until it is tender and caramelized. In a separate pan, melt the remaining butter and fry the sage leaves until crispy.

Once the risotto reaches the desired consistency, stir in the roasted pumpkin, crispy sage, and grated parmesan cheese. Season with salt and pepper to taste. Serve the Pumpkin and Sage Risotto hot, garnished with additional sage leaves and a sprinkle of parmesan cheese.
