Welcoming Fall with a Warm and Comforting Dish

As the leaves start to change and the air becomes crisper, I find solace in the warmth of my kitchen and the comforting aromas that fill the air. Today, I’m excited to share a unique recipe that perfectly captures the essence of fall – a savory Pumpkin and Sage Risotto. This dish is a delightful blend of earthy pumpkin, fragrant sage, and creamy risotto, making it the ideal meal to cozy up with on a cool autumn evening.

Ingredients:

  • 200g arborio rice
  • 300g pumpkin, diced
  • 1 shallot, finely chopped
  • 10 fresh sage leaves
  • 1 liter vegetable broth
  • 150ml white wine
  • 50g butter
  • 50g parmesan cheese, grated
  • to taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • grater

To start, heat the vegetable broth in a saucepan over low heat. In a separate saucepan, melt half of the butter and sauté the shallot until translucent. Add the arborio rice to the pan and toast it for a few minutes until it becomes slightly translucent.

Next, pour in the white wine and allow it to simmer until it is almost completely absorbed. Begin ladling the warm vegetable broth into the rice, one ladle at a time, stirring continuously until the liquid is absorbed before adding more. This process should take about 20-25 minutes, and the rice should be cooked but still slightly firm to the bite.

While the risotto is cooking, roast the diced pumpkin in the oven until it is tender and caramelized. In a separate pan, melt the remaining butter and fry the sage leaves until crispy.

Once the risotto reaches the desired consistency, stir in the roasted pumpkin, crispy sage, and grated parmesan cheese. Season with salt and pepper to taste. Serve the Pumpkin and Sage Risotto hot, garnished with additional sage leaves and a sprinkle of parmesan cheese.

One clever tip to make this dish even more flavorful is to infuse the vegetable broth with a cinnamon stick and a pinch of nutmeg while heating it up. This will add a subtle warmth and depth of flavor to the risotto that perfectly complements the pumpkin and sage.

I hope you give this Pumpkin and Sage Risotto a try and experience the cozy flavors of fall in every bite. Feel free to experiment with different herbs or vegetables to make this dish your own. Enjoy!
