To start this culinary adventure, you will need the following ingredients:
– 200g firm tofu, cubed
– 1/2 red bell pepper, sliced
– 1/2 yellow bell pepper, sliced
– 1/2 cup pineapple chunks
– 1/2 cup mango chunks
– 1/4 cup coconut milk
– 2 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 tsp red curry paste
– 1/2 tsp turmeric
– Fresh cilantro, for garnish
– Cooked jasmine rice, for serving

For this recipe, you will need the following kitchen tools:

  • wok
  • spatula
  • knife
  • cutting board

Start by pressing the tofu to remove excess water, then cut it into cubes. Heat the wok over medium-high heat and add the tofu cubes, cooking until they are golden and crispy. Remove the tofu from the wok and set it aside.

In the same wok, add the sliced bell peppers and stir fry until they are slightly tender. Next, add the pineapple and mango chunks, coconut milk, soy sauce, rice vinegar, red curry paste, and turmeric. Stir well to combine all the flavors.

Return the crispy tofu cubes to the wok and gently mix everything together. Let the stir fry simmer for a few minutes to allow the flavors to meld and the tofu to soak up the delicious sauce.

Once everything is heated through, remove the wok from the heat and garnish the dish with fresh cilantro. Serve the Tropical Thai Tofu Stir Fry over cooked jasmine rice and enjoy the explosion of tropical flavors in every bite.
