As the summer heat begins to fade, I find myself craving the vibrant flavors of tropical cuisine. To satisfy my cravings, I’ve created a unique and exotic recipe that combines the freshness of tropical fruits with the heartiness of rice and a touch of spice.

Ingredients:

  • jasmine rice (200g)
  • coconut milk (400ml)
  • pineapple chunks (150g)
  • mango slices (100g)
  • red bell pepper, diced (75g)
  • jalapeno, sliced (1)
  • lime, juiced (1)
  • fresh cilantro, chopped (20g)
  • toasted coconut flakes (30g)

  • wooden spoon

Start by cooking the jasmine rice according to the package instructions, but substitute water with coconut milk for added richness. While the rice is cooking, prepare your fruits and vegetables. In a large mixing bowl, combine the cooked rice, pineapple chunks, mango slices, diced red bell pepper, and sliced jalapeno. Squeeze the juice of one lime over the mixture and toss gently to combine.

In a small saucepan, toast the coconut flakes over medium heat until golden brown and fragrant. Add the toasted coconut flakes to the rice bowl along with the chopped fresh cilantro. Mix everything together until well combined, ensuring the flavors are evenly distributed.

Tip:

For an extra burst of flavor, try adding a splash of soy sauce or a drizzle of honey to the rice bowl before serving.
