Today, I’m excited to share with you a recipe for a Spiced Mango Coconut Tart, a dessert that perfectly combines the sweet tanginess of mango with the creamy richness of coconut. This dessert is a delightful way to transport your taste buds to a sunny beach, no matter the season.

Ingredients:

  • 400g mango puree
  • 200ml coconut milk
  • 150g brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • zest of 1 lemon
  • pinch of salt
  • store-bought pie crust

  • tart pan

To start, preheat your oven to 350°F (180°C). In a mixing bowl, combine the mango puree, coconut milk, brown sugar, cinnamon, ginger, nutmeg, lemon zest, and a pinch of salt. Whisk everything together until well combined and smooth.

Next, roll out your store-bought pie crust and line a tart pan with it. Trim off any excess crust hanging over the edges. Pour the mango coconut mixture into the crust and use a pastry brush to spread it out evenly.

Place the tart pan in the preheated oven and bake for 30-35 minutes, or until the filling is set and the crust is golden brown. Remove from the oven and let it cool completely before slicing into wedges.

This Spiced Mango Coconut Tart weighs approximately 850g, serves 6, with each serving weighing around 140g. Each serving is estimated to have around 250 calories.
