Today, I’m excited to share my latest culinary creation with you: a Spicy Mango Coconut Curry that will surely warm you up and tantalize your taste buds. The combination of sweet mango, creamy coconut milk, and a hint of spice creates a dish that is both comforting and exotic.

Ingredients:

  • 1 ripe mango, diced (approximately 200g)
  • 1 can of coconut milk (400ml)
  • 2 chicken breasts, cubed (approximately 400g)
  • 2 tablespoons of red curry paste
  • 1 stalk of lemongrass, sliced
  • 1 tablespoon of minced ginger
  • 3 cloves of garlic, minced
  • 4 fresh lime leaves
  • 1 tablespoon of fish sauce
  • 1 tablespoon of brown sugar
  • Fresh cilantro, chopped, for garnish

To start, heat some oil in a large skillet over medium heat. Add the minced garlic, ginger, and lemongrass, and sauté for a couple of minutes until fragrant. Next, add the chicken cubes and cook until they are no longer pink.

Once the chicken is cooked through, add the red curry paste and stir to coat the chicken. Pour in the coconut milk and add the diced mango, lime leaves, fish sauce, and brown sugar. Let the curry simmer for about 15-20 minutes, allowing the flavors to meld together.

Once the curry has thickened slightly, taste and adjust the seasoning as needed. If you prefer a spicier curry, you can add more red curry paste. If you like it sweeter, add a touch more brown sugar.

Serve the Spicy Mango Coconut Curry hot over steamed rice, garnished with fresh cilantro. The combination of spicy, sweet, and savory flavors is sure to delight your taste buds and warm you up on a chilly day.
