  • cauliflower rice (400g)
  • coconut milk (200ml)
  • curry powder (2 tbsp)
  • ginger (1-inch piece, grated)
  • garlic (2 cloves, minced)
  • onion (1, finely chopped)
  • red bell pepper (1, sliced)
  • chickpeas (1 can, drained and rinsed)
  • spinach (handful)
  • salt and pepper to taste
  • coconut oil (2 tbsp)

Start by heating coconut oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant. Stir in the grated ginger and curry powder, allowing the spices to bloom for a minute.

Next, add the sliced red bell pepper and chickpeas to the skillet. Cook until the vegetables are tender-crisp, then pour in the coconut milk. Allow the mixture to simmer for a few minutes to marry the flavors together.

Incorporate the cauliflower rice into the skillet, stirring well to coat it with the creamy curry sauce. Let the mixture cook until the cauliflower is tender but still retains a bit of bite. Season with salt and pepper to taste.

Finally, toss in a handful of fresh spinach and gently wilt it into the dish. Once the spinach has wilted, remove the skillet from heat. Serve the coconut curry cauliflower rice hot, garnished with fresh herbs like cilantro or a sprinkle of toasted coconut flakes.
