  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • tofu (200g, diced)
  • mushrooms (150g, sliced)
  • snow peas (100g)
  • lime (1, juiced)
  • cilantro (for garnish)

To start, cook the rice noodles according to the package instructions, then drain and set aside. Next, add the cooked noodles to the pot of coconut curry sauce, mixing until the noodles are well coated. Squeeze in the juice of one lime for a burst of fresh acidity. Finally, add in the sautéed tofu, mushrooms, and snow peas, stirring gently to combine all the ingredients.
