  • purple sweet potatoes (500g)
  • coconut milk (400ml)
  • curry powder (1 tbsp)
  • canned chickpeas (200g)
  • red bell pepper (1)
  • fresh cilantro (a handful)

  • chef’s knife
  • cutting board
  • potato peeler
  • saucepan
  • wooden spoon

Start by peeling and chopping the purple sweet potatoes into bite-sized chunks. In a saucepan, combine the coconut milk, curry powder, and sweet potatoes. Bring to a simmer over medium heat and cook until the sweet potatoes are tender, about 15-20 minutes.

Meanwhile, drain and rinse the chickpeas and dice the red bell pepper. Add them to the saucepan with the sweet potatoes and continue to simmer for another 5-10 minutes until everything is heated through. Season with salt and pepper to taste.
