  • 400ml coconut milk
  • 500g boneless lamb leg, thinly sliced
  • 2 ripe plantains, sliced
  • 100g cashews, toasted
  • 3 star anise
  • 2 stalks lemongrass, crushed
  • 1 thumb-sized ginger, peeled and sliced
  • 2 chillies, sliced
  • 2 tbsp fish sauce
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped

Preparation

To begin, heat the wok over medium heat and add the coconut milk, star anise, lemongrass, ginger, and chillies. Let the mixture simmer for 5 minutes to infuse the flavors. Then, add the sliced lamb and cook until browned.

Next, add the sliced plantains and toasted cashews to the wok. Stir well to combine all the ingredients. Pour in the fish sauce and lime juice, then continue to cook until the lamb is tender and the plantains are caramelized.
