Today, I am excited to share a unique and vibrant recipe that is perfect for a sunny summer day. This dish combines bold flavors and unexpected textures for a truly unforgettable eating experience.

Ingredients:

  • purple sweet potato (peeled and cubed) – 300g
  • dragon fruit (peeled and diced) – 200g
  • pomegranate seeds – 100g
  • black rice – 1 cup
  • coconut milk – 400ml
  • lime juice – from 1 lime
  • fresh mint leaves – for garnish

Kitchen Tools:

  • chef’s knife
  • cutting board
  • saucepan
  • wooden spoon

Preparation:

Start by cooking the black rice according to the package instructions in a saucepan. In a separate saucepan, bring the coconut milk to a gentle simmer over medium heat. Add the purple sweet potato cubes and let them cook until tender, about 10-15 minutes.

Once the sweet potato is cooked, remove it from the coconut milk and set it aside. In the same coconut milk, add the diced dragon fruit and simmer for another 5 minutes until it softens slightly.

In a serving bowl, layer the cooked black rice, purple sweet potato, and dragon fruit. Drizzle the lime juice over the top and sprinkle with pomegranate seeds. Garnish with fresh mint leaves for a pop of color.

Tips:

For an extra burst of flavor, you can squeeze a bit of fresh lime juice over the entire dish just before serving. This will add a refreshing acidity that cuts through the creamy coconut milk and sweet fruits.

Serving:

This exotic dish weighs approximately 800g once fully cooked. It serves 4 people, with each serving weighing around 200g. Each serving is estimated to contain around 300 calories.
