Exotic Dragon Fruit Black Rice Recipe

Ingredients:

  • dragon fruit (150g)
  • black rice (200g)
  • coconut milk (400ml)
  • lemongrass (3 stalks)
  • pandan leaves (4 leaves)
  • palm sugar (100g)
  • salt (1 tsp)

Kitchen Tools:

  • saucepan
  • knife
  • wooden spoon
  • fine mesh sieve

To start, rinse the black rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice with the coconut milk, lemongrass, pandan leaves, palm sugar, and salt. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

While the rice is cooking, peel the dragon fruit and cut it into small cubes. After the rice has simmered for 30 minutes, add the dragon fruit to the saucepan and continue to cook for an additional 10-15 minutes, or until the rice is tender and the dragon fruit is heated through.

Once the rice is cooked, remove the lemongrass and pandan leaves from the saucepan. Using a fine mesh sieve, strain any excess liquid from the mixture.

The final dish should have a slightly sweet and creamy consistency, with a beautiful contrast of colors from the black rice and vibrant dragon fruit. It’s a delightful blend of flavors that will surely surprise and impress your taste buds!
