Exotic Dragon Fruit Lamb Chops Recipe

  • purple sweet potatoes (200g)
  • dragon fruit (100g)
  • lamb chops (300g)
  • lemongrass (2 stalks)
  • coconut milk (200ml)
  • ginger (30g)
  • star anise (2 pieces)
  • coriander (for garnish)
  • salt
  • pepper

Preparation:

First, peel and dice the purple sweet potatoes and dragon fruit into small cubes. Then, season the lamb chops with salt and pepper and set aside. In a saucepan, heat up some coconut milk with sliced lemongrass, ginger, and star anise until fragrant. Add in the diced sweet potatoes and dragon fruit, and let them simmer until tender. In a separate pan, sear the lamb chops until they are cooked to your liking.
