Today, I’m excited to share a unique recipe that I recently discovered and instantly fell in love with. This dish is perfect for a cozy night in or a special occasion when you want to impress your guests with something truly unexpected and delicious.

Ingredients:

  • black rice (200g)
  • dragonfruit (1, peeled and diced)
  • coconut milk (400ml)
  • lemongrass (2 stalks, bruised)
  • pandan leaves (3 leaves, tied in a knot)
  • palm sugar (50g, grated)
  • salt (1/2 tsp)

Preparation:

Start by rinsing the black rice under cold water until the water runs clear. In a saucepan, combine the black rice, coconut milk, lemongrass, pandan leaves, palm sugar, and salt. Bring to a boil, then reduce heat, cover, and simmer for about 30-40 minutes, stirring occasionally, until the rice is cooked and creamy.

Once the rice is cooked, remove the lemongrass and pandan leaves. Stir in the diced dragonfruit until well combined. Serve the dragonfruit black rice warm, garnished with extra diced dragonfruit on top for a pop of color.
