Today’s Unique Recipe: Dragonfruit Curry with Spiced Plantains

Greetings, foodies! Today, I’m excited to share a vibrant and exotic recipe that will surely tantalize your taste buds. Inspired by the colorful dragonfruit and the rich flavors of curry, I’ve created a dish that combines the sweetness of spiced plantains with the earthy warmth of coconut milk and curry spices. This dish is perfect for a cozy night in or a special dinner party. Let’s dive into the delicious details!

Ingredients:

  • 1 dragonfruit (200g)
  • 2 ripe plantains (300g)
  • 1 can of coconut milk (400ml)
  • 2 tablespoons of curry powder
  • 1 thumb-sized piece of ginger, grated
  • 3 cloves of garlic, minced
  • 1 onion, diced
  • 1 red chili, thinly sliced
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Kitchen Tools:

  • chopping board
  • knife
  • saucepan
  • grater
  • spatula

To start, peel and slice the plantains into rounds. In a saucepan, heat some coconut oil and fry the plantain slices until golden brown and caramelized. Remove them from the pan and set aside. In the same pan, sauté the diced onion, minced garlic, grated ginger, and sliced red chili until fragrant.

Next, add the curry powder and stir to coat the aromatics. Pour in the coconut milk and bring the mixture to a gentle simmer. Let the flavors meld together for a few minutes before adding in the dragonfruit, cut into cubes. Squeeze in the lime juice and season with salt and pepper to taste. Allow the curry to simmer for another 5-10 minutes until the dragonfruit is tender.

Once the curry is ready, serve it hot over a bed of fragrant jasmine rice or quinoa. Top it off with the caramelized plantains and a sprinkle of fresh cilantro. The combination of sweet, spicy, and creamy flavors in this dragonfruit curry is truly a delight for the senses.

This dragonfruit curry with spiced plantains weighs approximately 950g, serves 4 people, with an average serving weight of 237g and an estimated calorie count per serving of 350. For a unique twist, try adding a dollop of coconut yogurt on top before serving to enhance the creaminess of the dish.

I hope you give this recipe a try and enjoy experimenting with the flavors and ingredients. Bon appétit!
