Greetings, foodies! Today, I am thrilled to share a recipe that brings back memories of my tropical vacation last summer. These coconut-lime shrimp tacos are bursting with fresh flavors and are a perfect way to bring a taste of the beach into your home.

To start, gather the following ingredients:

  • fresh shrimp (300g)
  • coconut milk (200ml)
  • juice and zest of 1 lime
  • 2 cloves of garlic, minced
  • 1 jalapeno, thinly sliced
  • shredded red cabbage (100g)
  • 8 small corn tortillas
  • fresh cilantro, chopped
  • salt and pepper to taste

Make sure you have the following kitchen tools ready:

  • skillet
  • mixing bowl
  • zester
  • tongs

Start by marinating the shrimp in a mixture of coconut milk, lime juice, lime zest, minced garlic, salt, and pepper. Let it sit for about 30 minutes to absorb all the flavors. In the meantime, heat a skillet over medium heat and warm up the tortillas until they are soft and pliable.

Once the shrimp have marinated, heat some oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are pink and cooked through. Remove the shrimp from the skillet and set them aside.

In the same skillet, add the sliced jalapeno and cook for a minute until they are slightly softened. Then, add the shredded red cabbage and cook for another 2-3 minutes until it starts to wilt. Season with salt and pepper to taste.

To assemble the tacos, place a spoonful of the red cabbage mixture on a warm tortilla, top it with a few shrimp, and sprinkle with fresh cilantro. Repeat for the remaining tacos.

The total weight of the cooked dish is approximately 850g, with 4 servings. Each serving weighs around 212g, with an estimated calorie count of 300 per serving.

One unique tip for these tacos is to squeeze extra lime juice over the assembled tacos just before serving. The burst of citrus will enhance the flavors and brighten up the dish.
