Exotic Flavors: Middle Eastern-Inspired Stuffed Bell Peppers

Today, I’m excited to share a unique dish that combines flavors inspired by my recent trip to the Middle East. This Middle Eastern-inspired stuffed bell peppers recipe is a delicious and healthy option for a weeknight dinner that will transport your taste buds to exotic lands.

For this recipe, you will need the following ingredients:

  • 4 bell peppers
  • 200g ground lamb
  • 1 onion, diced
  • 1 cup cooked quinoa
  • 1/2 cup chopped dried apricots
  • 1/4 cup chopped fresh mint
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste

You will also need the following kitchen tools:

  • chef’s knife
  • cutting board
  • skillet
  • mixing bowl
  • baking dish

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.

In a skillet over medium heat, cook the ground lamb until browned. Add the diced onion and cook until softened. Add the cooked quinoa, chopped apricots, fresh mint, ground cumin, ground cinnamon, salt, and pepper. Stir well to combine all the ingredients.

Spoon the lamb and quinoa mixture into the prepared bell peppers, packing it tightly. Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender.

Once cooked, remove the stuffed bell peppers from the oven and let them cool slightly before serving. This dish pairs perfectly with a dollop of Greek yogurt or a drizzle of tahini sauce.

The approximate total weight of the cooked dish is 1000g, with 4 servings. Each serving weighs approximately 250g, with an estimated calorie count of 350 per serving.

One clever tip for this recipe is to mix in a handful of pine nuts with the lamb and quinoa mixture for an added crunch and nutty flavor.
