Today, I’m excited to share a vibrant and flavorful dish that’s perfect for those days when you want something healthy, satisfying, and packed with exotic flavors. This Thai-inspired tofu stir-fry is a celebration of fresh veggies, aromatic herbs, and a savory sauce that will transport your taste buds to Southeast Asia.

For this recipe, you’ll need the following ingredients:

  • firm tofu (cubed) – 400g
  • broccoli florets – 200g
  • carrots (sliced) – 150g
  • bell peppers (sliced) – 150g
  • green beans – 100g
  • coconut milk – 200ml
  • soy sauce – 50ml
  • sesame oil – 30ml
  • garlic (minced) – 3 cloves
  • ginger (grated) – 1 tablespoon
  • lime juice – 2 tablespoons
  • brown sugar – 1 tablespoon
  • fresh cilantro – for garnish

To create this delicious stir-fry, you’ll need the following kitchen tools:

  • wok
  • wooden spatula
  • chef’s knife
  • cutting board

Start by heating a wok over medium-high heat and adding a splash of sesame oil. Toss in the cubed tofu and cook until golden brown and crispy on all sides. Remove the tofu from the wok and set it aside.

In the same wok, add a bit more sesame oil and throw in the minced garlic and grated ginger. Sauté until fragrant, then add in the broccoli, carrots, bell peppers, and green beans. Stir-fry the vegetables until they are tender-crisp.

Next, pour in the coconut milk, soy sauce, lime juice, and brown sugar. Stir everything together until well combined, then add the crispy tofu back into the wok. Cook for a few more minutes to let the flavors meld together.

Once everything is heated through, serve your Thai-inspired tofu stir-fry hot, garnished with fresh cilantro. The combination of creamy coconut milk, zesty lime, and aromatic herbs will make your taste buds sing.

This dish weighs approximately 1200g and serves 4 people. Each serving is about 300g and contains around 350 calories.
