  • boneless chicken thighs (400g)
  • coconut milk (1 can – 400ml)
  • chicken broth (500ml)
  • lemongrass (2 stalks)
  • Thai basil leaves (1 cup)
  • red curry paste (2 tbsp)
  • ginger (thumb-sized piece, sliced)
  • garlic (3 cloves, minced)
  • fish sauce (2 tbsp)
  • lime juice (1 lime)
  • coconut sugar (1 tbsp)
  • salt (to taste)

To start, heat a saucepan over medium heat and add the red curry paste, minced garlic, and sliced ginger. Sauté until fragrant, about 2 minutes. Next, add the boneless chicken thighs and brown them on all sides.

Once the chicken is browned, pour in the chicken broth and coconut milk. Add the lemongrass stalks and let the soup simmer for about 15 minutes until the chicken is cooked through.

After the chicken is cooked, remove it from the soup and shred it using two forks. Return the shredded chicken to the pot and add in the Thai basil leaves, fish sauce, lime juice, coconut sugar, and salt. Stir well to combine all the flavors.

Let the soup simmer for another 5 minutes to allow the flavors to meld together. Taste and adjust the seasoning if needed. Remove the lemongrass stalks before serving.
