  • pumpkin seed oil (2 tbsp)
  • fermented tofu (150g, cubed)
  • lime zest (1 tbsp)
  • smoked paprika (1 tsp)
  • black salt (to taste)

Preparation

Start by peeling and cubing the butternut squash, then scoop out the pulp of the kiwano melon. Heat pumpkin seed oil in a large skillet over medium heat and add the butternut squash cubes. Cook until they start to soften, then add the kiwano melon pulp and crushed Szechuan peppercorns.

Once the fruits are soft and fragrant, add the fermented tofu cubes to the skillet and stir gently to combine. Sprinkle smoked paprika, lime zest, and black salt over the mixture, adjusting to your taste preferences. Cook for an additional 2-3 minutes until the flavors meld together beautifully.
