Crispy Risotto Cake with Spicy Mango Salsa

Today, I’m excited to share a recipe that combines the comforting richness of risotto with the fresh, zesty flavors of a tropical salsa. This dish is perfect for a summer gathering or whenever you want to impress your guests with a unique fusion creation.

Ingredients:

  • 250g risotto rice
  • 1 liter vegetable broth
  • 100g parmesan cheese, grated
  • 100g bread crumbs
  • 2 eggs
  • 1 ripe mango, diced
  • 1 jalapeno, minced
  • 1/2 red onion, finely chopped
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste

To start, cook the risotto rice according to the package instructions using the vegetable broth for added flavor. Once the risotto is cooked, stir in the grated parmesan cheese and season with salt and pepper. Let the mixture cool slightly before shaping it into patties.

In a shallow bowl, beat the eggs. In another shallow bowl, place the bread crumbs. Dip each risotto patty into the beaten eggs, then coat it with bread crumbs. Place the breaded patties on a baking sheet and refrigerate for 30 minutes to set.

While the risotto cakes chill, prepare the spicy mango salsa. In a mixing bowl, combine the diced mango, minced jalapeno, chopped red onion, lime juice, and cilantro. Season the salsa with salt and pepper to taste.

Heat a frying pan over medium heat and add a bit of oil. Cook the risotto cakes until they are golden and crispy on both sides, about 3-4 minutes per side.

Serve the crispy risotto cakes hot, topped with a generous spoonful of spicy mango salsa. The creamy, cheesy risotto perfectly complements the tangy, spicy salsa for a one-of-a-kind flavor experience.
