Exploring New Flavors: Spicy Mango Chicken Curry

Today, I’m excited to share a recipe that never fails to impress my friends and family: my Spicy Mango Chicken Curry. This dish is perfect for adding a touch of exotic flair to a cozy night in or entertaining guests with something truly unique. The combination of sweet mango, spicy curry, and tender chicken is a match made in culinary heaven.

To start, you’ll need the following ingredients:

  • 400g chicken breast (cut into bite-sized pieces)
  • 1 ripe mango (peeled and diced)
  • 1 onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1-inch piece of ginger (grated)
  • 1 green chili (chopped)
  • 2 tbsp curry powder
  • 1 can of coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Before you begin cooking, make sure you have these kitchen tools on hand:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • measuring spoons

Start by heating the vegetable oil in a large skillet over medium heat. Add the chopped onions, minced garlic, grated ginger, and chopped green chili to the skillet. Sauté until the onions are translucent and fragrant, about 5 minutes.

Next, add the chicken breast pieces to the skillet and cook until they are browned on all sides. Sprinkle the curry powder over the chicken and stir to coat evenly. Allow the spices to toast for a minute before pouring in the coconut milk.

Reduce the heat to low and let the curry simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly. Season with salt and pepper to taste.

Finally, gently stir in the diced mango pieces and let them warm through in the curry for a few minutes. Be careful not to overcook the mango, as you want it to retain its natural sweetness and texture.

Once everything is well combined and heated through, your Spicy Mango Chicken Curry is ready to serve. This dish weighs approximately 1200g in total, serves 4 people, with each serving weighing around 300g. A serving of this flavorful curry is estimated to be around 400 calories.

One unique tip for this recipe is to add a squeeze of fresh lime juice over the curry just before serving. The tangy citrus notes will enhance the flavors of the mango and curry, adding a refreshing twist to each bite.

I hope you give this Spicy Mango Chicken Curry a try and enjoy the burst of flavors it brings to your table. Feel free to customize the spice level or add your favorite veggies to make it your own. Bon appétit!
