Ingredients:

  • 1 ripe mango (about 300g)
  • 1 can of coconut milk (400ml)
  • 2 tablespoons of red curry paste
  • 2 chicken breasts, sliced (about 400g)
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 1 lime, juiced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

To start, peel and dice the ripe mango, discarding the pit. In a saucepan over medium heat, combine the diced mango, coconut milk, red curry paste, minced garlic, and grated ginger. Stir well to combine and bring to a simmer.

Add the sliced chicken breasts to the saucepan and cook until they are cooked through. This should take about 10-12 minutes.

Next, add the sliced red bell pepper and chopped onion to the saucepan. Cook for an additional 5-7 minutes until the vegetables are tender.

Finish the dish by squeezing the juice of one lime into the curry and season with salt and pepper to taste. Give everything a final stir to combine all the flavors.

Serve the Spicy Mango Coconut Curry hot, garnished with fresh cilantro. The combination of sweet mango, creamy coconut, and spicy curry flavors will delight your taste buds and leave you craving more.
