Ingredients:

  • 200g arborio rice
  • 400ml coconut milk
  • 2 stalks lemongrass, smashed
  • 50g red curry paste
  • 100ml white wine
  • 150g cherry tomatoes, halved
  • 50g parmesan cheese, grated
  • Handful of fresh basil leaves, chopped
  • 1 lime, juiced
  • To taste

To start, heat the coconut milk and lemongrass in a large saucepan over medium heat until it comes to a gentle simmer. Remove the lemongrass and stir in the red curry paste until well combined. Add the arborio rice and cook for a few minutes until the grains are well coated.

Next, pour in the white wine and allow it to be absorbed by the rice. Begin ladling in hot water, a cup at a time, stirring continuously until the rice is creamy and al dente. This process should take about 20-25 minutes.

Once the risotto is cooked to your liking, stir in the cherry tomatoes, parmesan cheese, basil, and lime juice. Season with salt and pepper to taste, and adjust the consistency with a little more water if needed.

Serve the Thai-Italian risotto hot, garnished with extra basil leaves and a wedge of lime on the side. Enjoy the fusion of creamy risotto with the aromatic flavors of Thai curry and fresh herbs—it’s a taste sensation like no other!
