This recipe was inspired by a recent trip I took to Thailand, where I fell in love with the fragrant spices and rich coconut curries.

To make these Coconut Curry Tacos, you’ll need the following ingredients:

  • 400ml coconut milk
  • 300g chicken breast, sliced
  • 50g curry paste
  • 1 lime, juiced
  • 8 small tortillas
  • Fresh cilantro leaves, for garnish
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, sliced

For this recipe, you will need the following kitchen tools:

  • skillet
  • spatula
  • knife
  • cutting board
  • grater

Start by heating a skillet over medium heat and adding the curry paste. Cook for a minute until fragrant, then add the sliced chicken breast and cook until browned. Pour in the coconut milk and let it simmer for about 10 minutes until the sauce thickens slightly.

While the curry is simmering, heat another skillet over medium heat and warm the tortillas for about a minute on each side. Once warmed, set them aside and prepare the toppings.

In a small bowl, combine the sliced red onion, bell pepper, and fresh cilantro leaves. Squeeze the lime juice over the mixture and toss to combine.

To assemble the tacos, spoon the coconut curry mixture onto each tortilla and top with the fresh vegetable mixture. Garnish with additional cilantro leaves and lime wedges if desired.

This recipe makes approximately 8 tacos, with each serving weighing around 200g. One serving of these Coconut Curry Tacos is approximately 350 calories.
