Introduction

Today, I’m excited to share with you a unique dish inspired by my recent trip to an exotic spice market. This recipe combines aromatic spices, tangy fruits, and tender meat for a flavorful and unforgettable meal that will transport your taste buds to distant lands.

Ingredients

  • 450g lamb shoulder, diced
  • 100g dried apricots
  • 50g pistachios
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 2 tbsp olive oil
  • 500ml vegetable stock
  • to taste

Preparation

Start by heating olive oil in a large pot over medium heat. Add the diced lamb shoulder and season with salt, pepper, cumin, coriander, and cinnamon. Cook until the meat is browned on all sides, about 5 minutes.

Next, pour in the vegetable stock and bring the mixture to a simmer. Cover the pot and let it cook for 1 hour, or until the meat is tender.

While the meat is cooking, roughly chop the dried apricots and pistachios. Once the meat is tender, add the apricots and pistachios to the pot. Allow the flavors to meld together for an additional 10 minutes.

Tips

For an extra burst of flavor, try adding a splash of orange juice or a sprinkle of orange zest to the dish before serving. The citrusy brightness will complement the rich spices and tender lamb beautifully.

Serving

This dish yields approximately 4 servings, with each serving weighing around 200g. To serve, spoon the fragrant lamb, apricot, and pistachio mixture onto a bed of fluffy couscous or steamed rice. Garnish with fresh cilantro or parsley for a pop of color and freshness.
