I am excited to share this unique recipe with you today as it combines the sweetness of mango with the rich flavors of curry in a delicious and unexpected way. The vibrant colors and bold flavors of this dish make it perfect for a special occasion or just to add something different to your weekly menu.

Ingredients:

  • 3 ripe mangoes (400g)
  • 1 can of coconut milk (400ml)
  • 1 red bell pepper (150g)
  • 1 onion (100g)
  • 3 garlic cloves (10g)
  • 1-inch piece of ginger (20g)
  • 2 tablespoons of curry powder
  • 1 teaspoon of chili flakes
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Kitchen Tools:

  • wooden spoon

Start by heating the vegetable oil in a saucepan over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until fragrant. Stir in the curry powder and chili flakes, cooking for another minute to release the flavors.

Next, add the diced mangoes and sliced red bell pepper to the pan, stirring well to coat them in the spices. Pour in the can of coconut milk and bring the mixture to a simmer. Let it cook for about 15-20 minutes until the mangoes are tender and the flavors have melded together.

Season the curry with salt and pepper to taste, adjusting the spices as needed. Serve the exotic mango curry hot over a bed of fluffy rice or with warm naan bread to soak up the delicious sauce.

The total weight of the cooked dish is approximately 1000g, making around 4 servings. Each serving weighs around 250g, with an estimated calorie count of 300 per serving.
