Exotic Moroccan Lamb Tagine

Moroccan-Inspired Lamb Tagine

Today, I’m sharing a recipe for a Moroccan-inspired lamb tagine that’s perfect for cozy winter nights. The warming spices and tender meat will transport you to a bustling Moroccan market with each bite. The rich flavors and fragrant aromas make this dish truly unforgettable.

Ingredients:

  • 500g lamb shoulder, cubed
  • 200g dried apricots
  • 300g couscous
  • 1 large onion, sliced
  • 4 cloves of garlic, minced
  • 1 cinnamon stick
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • A pinch of saffron threads
  • 750ml vegetable stock
  • 2 tbsp olive oil
  • A handful of fresh coriander, chopped

Kitchen Tools:

  • chef’s knife
  • cutting board
  • tagine or heavy-bottomed pot
  • wooden spoon

To start, heat the olive oil in a tagine or heavy-bottomed pot over medium heat. Add the sliced onion and minced garlic, cooking until softened. Next, add the cubed lamb shoulder and brown on all sides.

Once the lamb is browned, stir in the ground cumin, ground coriander, and saffron threads, coating the meat evenly. Add the cinnamon stick and dried apricots, then pour in the vegetable stock. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 1.5 to 2 hours, or until the lamb is tender.

While the tagine is simmering, prepare the couscous according to the package instructions. Fluff it with a fork and set aside.

Once the lamb is tender, season the tagine with salt and pepper to taste. Serve the lamb tagine over a bed of fluffy couscous, garnished with chopped fresh coriander.

This recipe yields approximately 4 servings, with each serving weighing around 400g. One serving of this Moroccan-inspired lamb tagine is approximately 500 calories.

An unusual tip for this dish is to add a sprinkle of toasted almonds on top for an extra crunch and nutty flavor.
