Hey there, foodies! Today, I’m excited to share a dish that I whipped up on a rainy afternoon while feeling nostalgic for my travels to Morocco. This flavorful creation combines the exotic spices of the souk with a hint of sweetness that will transport you to the bustling streets of Marrakech. So, let’s dive into this inventive recipe that is as unique as it is delicious.

Ingredients:

  • lamb chops (400g)
  • dried apricots (100g)
  • harissa paste (2 tbsp)
  • ground cumin (1 tsp)
  • cinnamon (1/2 tsp)
  • lemon (juice of 1)
  • honey (2 tbsp)
  • olive oil (3 tbsp)
  • salt and pepper

Kitchen Tools:

  • grill pan
  • mixing bowl
  • tongs

Preparation:

In a mixing bowl, combine the harissa paste, ground cumin, cinnamon, lemon juice, honey, olive oil, salt, and pepper. Mix well to create a marinade. Add the lamb chops to the marinade, making sure they are well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour.

Heat a grill pan over medium-high heat. Grill the marinated lamb chops for 3-4 minutes per side, or until cooked to your desired level of doneness. In the last minute of cooking, add the dried apricots to the grill pan to caramelize slightly.

Once the lamb chops and apricots are cooked, remove them from the pan and let them rest for a few minutes. Serve the lamb chops with the caramelized apricots on top, drizzling any remaining marinade from the pan over the dish.

Tips for a Flavorful Twist:

For an extra burst of flavor, sprinkle some chopped fresh mint over the dish before serving. The refreshing mint will complement the rich spices and sweet apricots beautifully, adding a fresh and zesty element to each bite.
