Today, I’m excited to share a unique dish that I created based on a recent trip to a spice market. The vibrant colors and rich aromas inspired me to combine unexpected flavors in a truly special recipe. This dish is perfect for those looking to explore new tastes and surprise their taste buds.

Ingredients:

  • purple cauliflower (400g)
  • curry leaf (10 leaves)
  • pomegranate seeds (100g)
  • coconut milk (200ml)
  • black sesame seeds (15g)
  • tamarind paste (30g)
  • cinnamon stick
  • coconut oil
  • salt

Kitchen Tools:

  • chef’s knife
  • cutting board
  • frying pan
  • spatula
  • grater
  • oven

Preparation:

I start by preheating the oven to 200°C. I carefully slice the purple cauliflower into florets and place them on a baking tray. Drizzle some coconut oil over the cauliflower and sprinkle with salt. Roast in the oven for about 20 minutes until the edges are golden brown and crispy.

In a frying pan, I heat some coconut oil and add the curry leaves, black sesame seeds, and a cinnamon stick. Once the seeds start to pop, I add the roasted cauliflower florets and stir well. Next, I pour in the coconut milk and tamarind paste, letting the flavors meld together over low heat for about 10 minutes.

Finishing Touches:

To finish the dish, I sprinkle fresh pomegranate seeds over the top for a burst of color and sweetness. The combination of flavors and textures in this dish is truly a delight for the senses.

Tips:

For an extra touch of flavor, try grating some fresh coconut over the finished dish before serving. The added texture and taste will take this dish to the next level.
