  • purple cauliflower (300g)
  • blood oranges (2)
  • pistachios (50g)
  • honey (2 tbsp)
  • olive oil (3 tbsp)
  • goat cheese (100g)
  • fresh mint leaves
  • salt and pepper to taste

Start by preheating your oven to 400°F (200°C). Wash and cut the purple cauliflower into florets. Toss the florets in 2 tablespoons of olive oil on a baking sheet. Season with salt and pepper, then roast in the oven for 20-25 minutes until tender and caramelized.

While the cauliflower is roasting, prepare the dressing by whisking together the juice of one blood orange, 1 tablespoon of olive oil, and honey in a small saucepan over low heat. Allow it to simmer for a few minutes until slightly thickened.
