Exotic Purple Potato & Dragon Fruit Curry

Today, I’m excited to share a unique and flavorful dish that I recently created. This recipe was inspired by the changing weather and my desire to try something new in the kitchen.

Ingredients:

  • 200g purple potatoes
  • 100g dragon fruit
  • 150ml coconut milk
  • 10g curry leaves
  • 1 stalk lemongrass
  • 5g chili flakes
  • 20ml sesame oil
  • 50g cashew nuts
  • to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • medium saucepan
  • vegetable peeler

Preparation:

I start by washing and peeling the purple potatoes, then cutting them into small cubes. In a medium saucepan over medium heat, I add the coconut milk, curry leaves, lemongrass, and chili flakes. I let it simmer for a few minutes to infuse the flavors.

Next, I add the purple potatoes to the saucepan and let them cook until they are soft and tender. Meanwhile, I peel and dice the dragon fruit and toast the cashew nuts in a dry pan until they are golden brown.

Once the potatoes are cooked, I remove the lemongrass stalk and mash the potatoes lightly to create a creamy texture. I then stir in the diced dragon fruit, sesame oil, and toasted cashew nuts. Finally, I season the dish with salt to taste.

Serving:

This exotic purple potato and dragon fruit curry weighs approximately 500g once cooked. It serves 2 people, with each serving weighing around 250g. Each serving is estimated to have around 350 calories.

Tips:

For an added burst of flavor, try squeezing some fresh lime juice over the curry just before serving. The acidity of the lime will enhance the other flavors in the dish and add a refreshing zing.
