I’m excited to share a new exotic recipe that I recently discovered during my travels to Thailand. This Pineapple-Coconut Chicken Curry combines the sweetness of pineapple with the creaminess of coconut milk and the bold flavors of traditional Thai spices. It’s a dish that’s perfect for a cozy night in or a gathering with friends. Let’s dive into the details of this delicious recipe.

Ingredients:

  • 800g chicken breast, diced
  • 400g pineapple chunks
  • 400ml coconut milk
  • 4 tbsp red curry paste
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • 4 kaffir lime leaves
  • handful of Thai basil leaves
  • 2 tbsp cooking oil

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

To start, heat the cooking oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned on all sides. Next, add the red curry paste and stir to coat the chicken evenly. Allow the curry paste to cook for a minute to release its flavors.

Once the curry paste is fragrant, pour in the coconut milk and stir well to combine. Add the pineapple chunks, fish sauce, and palm sugar to the skillet. Tear the kaffir lime leaves in half and add them to the mixture. Bring the curry to a simmer and let it cook for about 15-20 minutes, stirring occasionally.

As the curry cooks, the flavors will meld together, creating a rich and aromatic sauce. The pineapple adds a sweetness that balances the heat of the curry paste, while the coconut milk creates a creamy base.

Just before serving, stir in the Thai basil leaves for a burst of fresh flavor. Serve the Pineapple-Coconut Chicken Curry hot over steamed jasmine rice for a complete and satisfying meal.

The approximate total weight of the cooked dish is 1800g, with about 6 servings. Each serving weighs approximately 300g, with an estimated calorie count of 350 per serving.

One unique tip for this recipe is to add a splash of lime juice at the end for a pop of acidity that brightens up the dish.
