Introducing: Spicy Mango Coconut Rice

Today, I’m excited to share a flavorful and exotic dish that combines the sweetness of mango with the creaminess of coconut and a kick of spice. This dish is perfect for a summer evening when you want something light yet satisfying.

Ingredients:

  • jasmine rice (200g)
  • coconut milk (400ml)
  • mango, diced (1 large)
  • red chili, thinly sliced (1)
  • ginger, minced (1 tbsp)
  • lemongrass, bruised (1 stalk)
  • lime zest (from 1 lime)
  • cilantro, chopped (for garnish)

Kitchen Tools:

  • saucepan
  • chef’s knife
  • cutting board
  • wooden spoon

Preparation:

Start by rinsing the jasmine rice under cold water until the water runs clear. In a saucepan, combine the coconut milk, mango, red chili, ginger, lemongrass, and lime zest. Bring to a simmer over medium heat.

Once the mixture is simmering, add the rinsed jasmine rice and a pinch of salt. Stir to combine, then cover the saucepan with a lid and reduce the heat to low. Let the rice cook for about 15-20 minutes, or until all the liquid is absorbed and the rice is cooked through.

Remove the lemongrass stalk and fluff the rice with a fork. Serve the spicy mango coconut rice garnished with fresh cilantro.

Tips for Success:

For an extra burst of flavor, try adding a splash of lime juice before serving. This will enhance the tropical taste of the mango and coconut while providing a refreshing zing.

This recipe makes approximately 4 servings. Each serving weighs about 225g and is approximately 300 calories.
