Spicy Mango Curry with Coconut Rice

Today, I’m sharing a recipe that’s perfect for those days when you want to add a little twist to your dinner routine. This spicy mango curry with coconut rice is a burst of flavors that will transport you to a tropical paradise with every bite.

Ingredients:

  • 1 ripe mango, diced
  • 400ml coconut milk
  • 1 red chili pepper, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 500ml vegetable broth
  • 1 cup basmati rice
  • Fresh cilantro, chopped (for garnish)

Start by heating some oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant. Add the diced mango, sliced chili pepper, curry powder, and turmeric, and cook for another 2-3 minutes.

Pour in the coconut milk and vegetable broth, and bring the mixture to a gentle simmer. Let it cook for about 15-20 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

While the curry is simmering, prepare the coconut rice. Rinse the basmati rice until the water runs clear, then cook it according to package instructions, using the coconut milk instead of water for added flavor.

Once the curry is ready and the rice is cooked, serve the spicy mango curry over the coconut rice. Garnish with fresh cilantro for a burst of freshness.
